Zucchini Relish

celery-4 stalks, chopped
zucchini-10 C. chopped. do not peel
onions-4 large, chopped
red pepper or green-1, chopped
Pickling salt- 1/2 C.
vinegar-3 C.
sugar-3 1/4 C.
celery seed-2 1/2t.
mustard seed- 2 1/2 t.
turmeric powder -2t.
cornstarch - 2T. dissolved in
1/2 C. vinegar


Combine vegetables and pickling salt in a large
enamel or stainless steel bowl. Let stand overnight; then drain and rinse well. Bring to boil vinegar, sugar, and seasonings; add chopped vegetables; remove from heat and let stand 2 hours. Return to stove; bring to a boil. Add
cornstarch dissolved in vinegar; simmer 15 minutes.
Spoon into sterilized jars and seal Makes about
15 half-pints.
If you use big zucchini with hard skin. Peel
Can process in water bath for 30 minutes.

Very good on hot dogs and pork
